Here’s another tasty and healthy veggie recipe in Japanese style: Spinach with a Miso-Walnut Dressing. This dish is cold, making it perfect as a summer dish.

De-stem and wash 1 bag (10 oz.) fresh spinach. Boil in H2O for 2 minutes and immediately drain and immerse into cold H2O. When cool, squeeze excess H2O and chill spinach.

Miso-Walnut Dressing:  Toast 1/2C. walnuts in pan on stove top on low-medium heat, turning often until toasted, but not black. Grind walnuts in suribachi or any other mortar and pestle (or grind in food processor) until smooth-ish. Add 3 Tblsp. dashi or veggie broth; 1 Tblsp. mirin; 1 Tblsp. sweet white miso; 2 Tblsp. shoyu; and 1/4 teasp. sal de mer. Whisk.

Separate spinach and plate. Top with dressing and toasted white sesame. This recipe will serve 4-6 people as a side dish. Light, easy, quick (1/2 hour from start to finish, including de-shelling walnuts) very healthy and tasty. Summer perfection!
