Today’s Japanese-fusion recipe is Green Tea Creme-Brulee. Chef Saito makes a few versions of the classic creme-brulee: ginger, Grand Marnier, coconut, and maple syrup, but one of his favorites is green tea creme-brulee. A little macha tea mixed in with egg yolk and creme that is baked and then the top sugar is glazed with a torch. Chef serves green tea creme-brulee with a slice of mandarin orange. Delicious warm or cold!
