Today’s Japanese Fusion dish is Teriyaki Steak. Teriyaki mean “shiny grilled.”
Chef Saito typically marinades meat overnight with a port sake, soy sauce and scallions after salt and  a black pepper. After grilling, Chef Saito wraps each steak in grilled bacon and will put on a glazing Teriyaki Sauce which is consists of beef stock. port sake, brown sugar, ginger, scallions and potato starch. This glazing gives an extra dimension and pretty appearance.
