Today’s Japanese-fusion dish is Yuzu Duck. Chef Saito uses the classic French Duck l’Orange dish as a basis for this dish. To prepare the duck, Chef Saito soaks it in a ginger, scallion and honey water bath, dries and then roasts the duck. At the last stage of roasting he then adds a delicious sauce of  Grand Marnier, Port Sake, honey and Yuzu (Japanese lime).
